Tomato Rice / Thakkali Rice

Ingredients needed to make Tomato Rice / Thakkali Rice

3cup Basmati Rice, washed and soaked for 30mins

1tsp Mustard Seeds

1/4tsp Cumin

1 Onion, finely chopped

2-3tbsp Garlic, finely chopped

4-5 Green Chillies

Curry Leaves

4-5 Tomato, diced

1-2tbsp Whole Black Pepper, optional

1tsp Turmeric

6cup Boiling Water

Salt

Coriander Leaves, garnish

Method:

Heat some Oil in a pan and add Mustard seeds, allow it to pop.

Add Cumin and Whole Black Pepper.

Carefully add Onion, Garlic, Green Chillies and Curry Leaves.

Saute until Onion turns light golden brown in color.

Sprinkle Turmeric powder and saute for few mins.

Add diced Tomato and saute until all the Tomato is mashed and cooked.

Sprinkle Basmati Rice and saute until all the masala is fully coated on Rice.

Carefully pour boiling Water and Salt, according to taste.

Let everything come to a rolling boil.

When Water and Rice comes to same level, cover the pan with a tight lid and TURN OFF THE FLAME.

Wait for 15-20mins for the Rice to cook.

DO NOT OPEN THE LID.

After 15-20mins, open the lid and sprinkle some Coriander Leaves and using a fork fluff up the Rice.

Serve Tomato Rice / Thakkali Rice hot or warm with Raita, Pickle, Pappadam or any sort of non-veg curries.

Notes:

This Tomato Rice / Thakkali Rice is a One-pot Dish. Usually people use leftover cooked Basmati Rice to make Tomato Rice / Thakkali Rice.

When you follow this method, you could really taste a great flavor on Rice, coz it’s cooked together in masala.

Insted of using fresh Tomatoes, use canned diced Tomatoes for more flavor and deep color.

Also for more flavor, use Chicken or Vegetable Stock insted of Water.
