Ingredients

  • 1st Step: Shrimp Curry / Masala:
  • 2 pound Shrimp, cleaned

  • 1 Onion, finely Chopped

  • 5tbsp Garlic and Ginger, finely chopped

  • 3 Tomato, diced

  • Curry Leaves

  • 1tbsp Chilli Powder

  • 1/2tsp Turmeric

  • 1tbsp Garam Masala

  • Salt

  • Coriander Leaves, garnish

  • 2nd Step: Minced Meat Masala:
  • 2-3 pound Minced Meat, use Chicken or Beef

  • 1 Onion, finely chopped

  • 5tbsp Ginger and Garlic, finely chopped

  • 3-4 Green Chillies

  • Curry Leaves

  • 1tbsp Chilli Powder

  • 1tsp Turmeric

  • 1tbsp Pepper Powder

  • 1tbsp Garam Masala

  • Salt

  • Coriander Leaves, garnish

  • Oil

  • 3rd Step: Cooking Rice
  • 3cup Basmati Rice, washed and soaked for 30mins
     

  • 3tbsp Ghee or Clarified Butter

  • 1stick Cinnamon

  • 4 Cardamom

  • 5 Cloves

  • 1 Star Anise

  • Salt

  • 6cups Boiling Water

  • 4th Step: Coriander Rice
  • 1bunch Coriander Leaves / Cilantro

  • 1cup Grated Coconut

  • 1tsp Ginger

  • 3 Green Chillies

  • 1 Lemon squeezed

  • Salt

  • 5th Step: Lemon Rice
  • 1-2 Lemon Juice, freshly squeezed

  • 3-4 drops of Yellow Food Coloring

Directions

  • Method for step 1:
  • Heat some Oil in a pan and  saute Onion until it turns golden brown in color.
  • Add Ginger, Garlic and Curry Leaves.
  • Saute for few mins or until raw smell of Ginger and Garlic is gone.
  • Add Chilli and Turmeric.
  • Saute for few mins or until raw smell of Spices are gone.
  • Add Tomato and Salt.
  • Cook until Tomatoes are fully cooked and mashed.
  • Carefully add Shrimp. ( refer *notes )
  • Mix everything well and allow Shrimp to cook.
  • Sprinkle Garam Masala and Coriander leaves.
  • Keep it a side.
  • Method for step 2:
  • Heat some Oil in a pan and saute Onion until it turns golden brown in color.
  • Add Ginger, Garlic, Green Chillies and Curry Leaves.
  • Saute for few mins or until raw smell is gone.
  • Add Chilli Powder and Turmeric.
  • Saute for few mins and add minced Meat.
  • Stir everything well and allow Meat to cook.
  • When Meat is fully cooked  and its fully dried add Garam Masala, Salt and Black Pepper.
  • Sprinkle some Coriander Leaves and keep it a side.
  • Method for step 3:
  • Heat some Ghee in a pan and add Whole Spices.
  • When spices starts to pop add washed and soaked Rice and fry for few mins.
  • Carefully add boiling Water and stir everything.
  • Add Salt, taste Water and make sure you could taste Salt, if not then add more.
  • Allow Rice and Water to boil together.
  • When Water and Rice comes to same level, cover the pan with a tight lid and turn off the flame.
  • Allow it to sit there for about 20-30mins.
  • Do not open the lid before the time.
  • After 30mins open the lid and fluff up the Rice using a fork.
  • Divide Rice into 3 equal parts and keep it a side.
  • 1 portion for Coriander Rice, another for Lemon Rice and the 3rd portion will be as it is.
  • Method for step 4:
  • Combine all the ingredients together and grind into smooth paste.
  • Pour Coriander Chutney over one of the portion of Rice.
  • Mix everything well and keep it a side.
  • Method for step 5:
  • Mix Lemon Juice and Food color together.
  • Drizzle over another portion of Rice.
  • Mix everything well and taste the Rice, if needed add more Lemon Juice and Yellow color.
  • Keep it a side.
  • 6th Step: Assembling Ribbon Rice / Layered Rice
  • Grease a Cake tin with Ghee or Cooking Oil spray.
  • Spread plain White Rice as 1st Layer.
  • Press down the Rice layer firmly.
  • Spread Minced Meat Masala as 2nd Layer.
  • Press down the Meat layer firmly.
  • Spread Coriander Rice as 3rd Layer.
  • Press down the Coriander layer firmly .
  • Spread Shrimp Masala as 4th Layer.
  • Press down the Shrimp layer firmly.
  • Spread Lemon Rice as 5th Layer.
  • Press down the Lemon Rice layer firmly.
  • Cover the Cake tin  with a foil and Bake in a 350degree Pre-heated Oven for about 30-35mins.
  • Carefully flip the Tin onto a plate by turning the Cake pan upside down.
  • Serve Ribbon Rice / Layered Rice warm with Raita, Pickle and Pappadam.

Notes

  • Shrimp: Use fresh Shrimp or cooked Shrimp.
    To cook Shrimp, add some Salt and small piece of Kudampuli and cook in a seperate pan. When Shrimp is cooked, you could see a lot of water or gravy or stock inside the pan. Add this stock or water or gravy first into the masala and allow it to evaporate, then only you should add Shrimp, otherwise Shrimp will get overcooked and will be rubbery.
    Always try to do this process early, will save some time.

  2. if ur making this recipe be careful to press each layer down nicely ……..otherwise it will not hold together …………..

  3. need to be very careful while layering…be specific with the quantity of spices and the amount of minced chicken or beef to be used…
