Kovakka or Tindora or Ivy Gourd StirFried
Ingredients needed to make Kovakka or Tindora or Ivy Gourd StirFried:
350gm Kovakka/ Tindora/ Ivy Gourd, sliced
1 Russet Potato, sliced
1 Onion, finely chopped
2-3tbsp Garlic, finely chopped
Curry Leav
1-2tbsp Red Chilli Flakes
1tsp Turmeric
Salt
Oil
Method:
Heat some Oil in a pan and saute Onion, Garlic and Curry Leaves.
When Onion turns light golden brown in color, add Chilli Flakes and Turmeric.
Saute on a medium low heat until raw smell of Chilli is gone.
Carefully add sliced Kovakka/Tindora/Ivy Gourd, Potato and Salt.
Mix everything well and cover the pan with a tight lid and allow Vegetables to cook.
Don’t forget to stir occassionally.
When Kovakka/Tindora/Ivy Gourd and Potato is fully cooked remove the lid and allow Vegetable to roast on a medium heat.
Make sure to stir occassionally until Vegetables are roast according to preference.
Serve Kovakka or Tindora or Ivy Gourd Stirfried with Rice or Roti.
