Ingredients

  • 1-2 Russet Potato, cubed and cooked

  • 1 Onion, thinly sliced

  • 3-4 Green Chillies

  • 1tbsp Ginger, thinly sliced

  • 1tsp Mustard Seeds

  • 1/4tsp Cumin

  • 2-3 Whole Dried Red Chillies

  • 1tsp Turmeric

  • Curry Leaves

  • Salt

  • 1 Carrot, grated ( optional )

  • 1/2cup Frozen Peas ( optional )

Directions

  • Heat some Oil in a pan and add Mustard Seeds.
  • Allow Mustard seeds to pop, then add Cumin and Dried Chillies.
  • Add Onion, Green Chillies, Ginger and Curry Leaves.
  • Saute until Onions turn transparent and soft.
  • Carefully add cooked Potato and Turmeric.
  • Mix everything well and if needed add some Water according to the consistency of the Aloo Masala / Potato Masala you like.
  • Carefully using the back of spatula, try to mash Potatoes.
  • Add Green Peas, Carrots and Salt.
  • Mix evrything well.
  • Serve Aloo Masala / Potato Masala warm with Roti or Dosa or Poori.
