1tbsp oil
1 chopped Onion
1tbsp grated Ginger
2 Carrots
1 Potatoes
1 bundle of Kale
1 chopped Tomatoes
1/2 cup each frozen Green Peas
Corn
1Qt of Vegetable Stock
Water
Salt
Pepper
Directions
- In a pan put 1tbsp oil , saute 1 chopped Onion & 1tbsp grated Ginger .
- Add 2 Carrots , 1 Potatoes , 1 bundle of Kale ,1 chopped Tomatoes , 1/2 cup each frozen Green Peas & Corn . ( Chop all the Vegetable )
- Add 1Qt of Vegetable Stock & 2 cup of Water . Allow the vegetables to cook down , then add Salt & Pepper according to taste .
- Serve it hot with Crackers .
- In this soup I had added some cooked Turkey also .
If you want you can just puree the soup .
I had pureed the half of the mixture cos I like the chunks in the soup .
