Ingredients needed to make Undampori :

2cup Whole Wheat Flour

2 Banana

Jaggery Syrup, as needed ( refer *notes )

1pinch Baking Soda

1pinch Salt

1/4tsp Cardamom Powder

Coconut Oil, for frying

Method:

On a mixing bowl mash Banana and carefully incorporate Wheat Flour, Baking Soda, Salt and Cardamom Powder.

Mix everything well.

Carefully add Jaggery syrup little by little, according to your taste ( I added around 1/2cup of  jaggery syrup )

Consistency of the dough should be sticky and soft.

Allow the dough to rest on a warm place for about 4hrs to rise and get fermented.

Heat some Oil in a frying pan and using an ice-cream scooper shape the dough or divide the dough into equal parts and fry on a medium low flame until Undampori is dark golden brown in color and  its fully cooked from inside.

Transfer Undampori into a tissue paper lined plate to drain excess Oil.

Serve Undampori hot or warm with Coffee or Tea.

*Note:

To make Jaggery Syrup, crush some jaggery into a saucepan and add some water. Allow it to boil together and melt. When jaggery is melted, strain the liquid through a fine mesh stainer and store in a glass  container for later use.
