1 bunch of Green Spinach
Wash Spinach nicely .
Roughly chop the Spinach .
Cook the Spinach until its soft , it will take only 1min .
( Don’t add water while you cook the Spinach , this vegetable have a lot of water inside it & it will release water when it heated . )
Immediately transfer it into a grinder .
3-4 Green Chillies
3 cloves of Garlic
1tbsp grated Ginger
Add all these ingredients into the grinder with Spinach .
Make a smooth purée .
1 stick Cinnamon
4 Cloves
4 Cardamom
Cashew & Raisins ( as required )
1 Onion , chopped
2 cup Basmati Rice
4 cup Hot Water
Salt
Directions
- Heat some Oil in a pan & crack all the Masala’s ( Cinnamon , Cloves & Cardamom ) .
- Add Onion , saute it until its soft & transparent .
- Add Cashew & Raisins , allow it to get a light golden brown colour .
- Add the Spinach paste , saute it until all the water is cooked down & masala is dried .
- Add the Rice , fry the Rice in a high flame for 2-3min .
- Add hot Water & Salt to the Rice .
- Mix everything well & allow the Water to boil .
- When water is reduced to the level of Rice , cover the pan with a tight lid & turn off the Gas .
- After 20-25min open the lid & fluff the Rice using a fork .
- Serve it hot with Raita , Pickle or even with Chicken Curry .
