Ingredients

  • 1 bunch of Green Spinach

  • Wash Spinach nicely .

  • Roughly chop the Spinach .

  • Cook the Spinach until its soft , it will take only 1min .

  • ( Don’t add water while you cook the Spinach , this vegetable have a lot of water inside it & it will release water when it heated . )

  • Immediately transfer it into a grinder .

  • 3-4 Green Chillies

  • 3 cloves of Garlic

  • 1tbsp grated Ginger

  • Add all these ingredients into the grinder with Spinach .

  • Make a smooth purée .

  • 1 stick Cinnamon

  • 4 Cloves

  • 4 Cardamom

  • Cashew & Raisins ( as required )

  • 1 Onion , chopped

  • 2 cup Basmati Rice

  • 4 cup Hot Water

  • Salt

Directions

  • Heat some Oil in a pan & crack all the Masala’s ( Cinnamon , Cloves & Cardamom ) .
  • Add Onion , saute it until its soft & transparent .
  • Add Cashew & Raisins , allow it to get a light golden brown colour .
  • Add the Spinach paste , saute it until all the water is cooked down & masala is dried .
  • Add the Rice , fry the Rice in a high flame for 2-3min .
  • Add hot Water & Salt to the Rice .
  • Mix everything well & allow the Water to boil .
  • When water is reduced to the level of Rice , cover the pan with a tight lid & turn off the Gas .
  • After 20-25min open the lid & fluff the Rice using a fork .
  • Serve it hot with Raita , Pickle or even with Chicken Curry .
