Seafood Paella

 

Paella is a Spanish dish . This dish is typically made in a  non-stick Paella pan . Paella pan is a shallow pan .
I don’t have a Paella pan but I used a 12inch  non-stick shallow pan . For this recipe I used :

2 cups Bomba Rice                                  12 Clams
4 cups Chicken Stock                              12 Mussels
1 Onion chopped                                     10 Shrimp
6-7 cloves Garlic                                      2 Chorizo Sausage
4 Tomatoes                                              Salt
1 Green Bell Pepper                                 Olive Oil
1/4 cup Green Peas                                  Saffron

Heat some Olive oil & saute Onion & Garlic .
Into that add the chopped Tomatoes , allow the Tomatoes to mash down .
Add the Bell Pepper & Sausage . Mix everything well .
Add the Rice & fry for 5min .
Turn down the heat to medium flame.
Add the Chicken Stock & cover the pan with a tight lid & allow the rice to cook for 10min.
Add the Saffron & Green Peas .
Tuck in  all of the seafood on the  rice & cover with the lid .
Cook for 15min . Don’t stir the rice , just shake the pan .
When Paella is cooked &  the rice looks fluffy & moist turn the heat up for 40 seconds until you can smell the rice is  toasted  at the bottom .
Serve it hot .
