Ingredients

  • 3lb Pork, sliced into medium size pieces

  • 1 Onion, finely chopped

  • 5tbsp Ginger, grated

  • 4-5 Green Chillies

  • Curry Leaves

  • 5tbsp Garlic, finely chopped

  • 1tbsp Chilli Powder

  • 1tsp Turmeric

  • 1tbsp Garam Masala

  • 1tsp Black Pepper Powder

  • Salt

  • Oil

  • Coconut Flakes, fresh or frozen

Directions

  • Into a big pan combine sliced Pork, grated Ginger, Green Chillies, Salt and Curry Leaves together.
  • Mix everything well and allow Pork to cook. ( refer *notes )
  • Heat some Oil in a pan and saute Onion, Garlic and Curry Leaves.
  • Saute until Onions turn light golden brown in color.
  • Add Chilli Powder and Turmeric, saute for few mintues or until raw smell of spices are gone.
  • Carefully pour, stock or leftover water into the pan.
  • Allow all the liquid to evaporate.
  • Carefully add cooked Pork and Coconut Flakes.
  • Fry until Pork is fully dried and fried.
  • Sprinkle Garam Masala and Black Pepper.
  • Mix everything well and taste Kerala Style Pork Fry,  if needed, add more Black Pepper.
  • Serve  Pork Fry / Pork Chops hot with Rice or Roti or Bread or even as an Appetizer.

Notes

  • Pork: While cooking Pork, you don’t need to add Water or use Pressure Cooker to cook.
    Wash Pork pieces and transfer into a pan and add Ginger, Green Chillies, Curry Leaves and Salt. Using your hands mix everything well and cover pan with a tight lid and allow Pork to cook. Occassionally stir everything, you could see lots of water coming out of Pork. Usually in 15-20mins Pork will be fully cooked. Once Pork is fully cooked you could see a lots of  water or stock inside the pan, use it in soup or gravy or take some time and allow it to evaporate.  If you are not sure whether Pork is fully cooked, you can always taste it out.
