Mutton Biriyani ( My Style )

 

For this recipe I used 3 pounds of Mutton .
Comparing to my other Biriyani recipes this one is very easy to make .
So lets start our Biriyani .

For making Mutton Curry you need :


3tbsp Coriander Powder                  1 chopped Onion
1tbsp Chili Powder                           1 whole bulb of Garlic
1tsp Turmeric Powder                      7tbsp grated Ginger
1tbsp Garam Masala                        3 Green Chilies
1tbsp Pepper Powder                      Curry Leaves
 Salt                                                 3 chopped Tomatoes

In a big pan take the cleaned Mutton & mix in all the ingredients .
If you like try to grind Garlic ,Ginger & Green Chilies  into a fine paste .
Add 1 cup of Water & cover the pan with a tight lid & cook the Mutton .
If you want use Pressure Cooker to cook the Mutton .
Once Mutton is cooked & there is a lot of gravy inside the curry  open the lid  & cook away all the liquid .
The curry should  have  little gravy but should not be too runny .
Add some chopped Coriander Leaves .

To make Rice :


2cups Basmati Rice              1stick Cinnamon
4cups Hot Water                  5 Cloves
Salt                                      4 Cardamon

In a pan heat some Ghee & add the spices .
Fry the Rice & add hot water & Salt .
When water is reduced to Rice level cover the pan with tight lid & turn off the gas .
After 20min open the lid & fluff the Rice .

For Garnish :

2 Onions
1/4 cup each Cashew & Raisin
Chopped Coriander Leaves

Thinly slice the Onion & fry until it turns golden brown in color .
Also fry Cashew & Raisins .

To Layer :

Take a big pan & brush some Ghee .
Put some Rice & level the Rice .
Add some Mutton Curry & level it on the top of the Rice .
Sprinkle some fried Cashew , Raisins ,Onions & Coriander Leaves .
Layer with some more Rice & continue doing it until you finish the Rice & Curry .
On top Drizzle some Ghee & bake in 350 degree pre-heated Oven for 30min .
Don’t forget to cover the pan with a tight lid .

Serve Biriyani with some Raita & Pickles .
