6-7 Okra
3 Brinjal / Eggplant
2 medium size Potatoes
2 Tomatoes
1 Onion
3-4 cloves of Garlic
2tbsp Coriander Powder
1tsp Chilli Powder
1tsp Black Pepper
1tsp Turmeric Powder
1tsp Garam Masala
Salt
Directions
- Slice all the Vegetables into medium size pieces .
- Heat some Oil in a pan & fry all the vegetables , until golden brown color .
- If there is excess Oil remove it & saute Onion & Garlic .
- When onion turns light golden brown in colour add all the Spices & Salt .
- Fry the masala in a low flame for 5min .
- Add Tomatoes & fried Vegetables .
- Cover the pan with a lid & cook all the Vegetables .
- Serve it hot with Rice or with Roti .
- Its a good recipe to finish all the left over uncooked vegetables .
- While frying Vegetables make sure to fry each Vegetable separately .
- If you are in a hurry try to boil the Potato & cook it all the way , then fry it in oil for few min , otherwise it will take a long time to cook the Potato & meanwhile all other vegetables will get mashed .
