Kozhi Nirachathu/Stuffed Chicken is a delicacy among Malabar Muslims . It’s a one dish You all should try at least once.

Ingredients

  • Ingredients Marinating Chicken:
  • 1 Whole Chicken, cleaned and scored (without skin)

  • 1/2tsp Chilli Powder

  • 1/4tsp Turmeric Powder

  • Salt

  • 1tbsp Lemon Juice

  • Ingredients to make Filling :
  • 2 Hard boiled Eggs

  • 1 small Onion , chopped

  • 1tsp Ginger Garlic Paste

  • 2 Green Chillies , chopped

  • 1-2 small Tomatoes , chopped

  • Curry Leaves

  • 1tsp Chilli Powder

  • 1/2tsp Turmeric Powder

  • 1tsp Garam Masala

  • Coriander Leaves , finely chopped

  • Salt

  • Cashew & Raisins , according to taste

  • Ingredients to make Gravy :
  • 1 Onion , chopped

  • 2-3 Green Chillies

  • 1tbsp Ginger Garlic Paste

  • 2 Tomato , chopped

  • 1tsp Chilli Powder

  • 1/2tsp Turmeric Powder

  • 1tsp Garam Masala

  • 1/2tsp Fennel Powder

  • Salt

  • Curry Leaves

  • Water , as needed

  • Coriander Leaves

Directions

  • Method for marinating chicken:
  • Mix all the ingredients together .
  • Apply it on to Chicken ( inside and out ) .
  • Keep it a side for 30min .
  • Method for making filling:
  • Heat some Oil in a pan & add Onion & Green Chillies  .
  • Sauté Onion until it turn light brown in colour .
  • Add Ginger , Garlic paste & sauté for few mins .
  • Add all the Masala’s or Powder’s ( Chilli Powder , Turmeric & Garam Masala ) .
  • Sauté until the raw smell of Masala is gone .
  • Add Tomato , Salt , Cashew & Raisin .
  • Sauté until Tomato is mashed .
  • Carefully add Egg & mix everything well .
  • Sprinkle some Coriander Leaves & the filling is ready .
  • Method for frying chicken:
  • Heat some Oil in a pan & fry the Chicken .
  • Once its seared all the sides, cover the pan with a lid & turn the flame down & allow the Chicken to cook from inside .
  • Don’t forget to turn the Chicken occasionally .
  • Once its cooked trough, remove from the Oil & carefully fill the cavity with the Egg filling .
  • Method
  • Heat some Oil in a pan & sauté Onion & Green Chillies .
  • Sauté until Onion turns light brown in colour .
  • Add Ginger Garlic Paste & mix everything well .
  • Add all the Masala’s or Powder’s ( Chilli Powder , Turmeric , Garam Masala & Fennel Powder ).
  • Sauté until the raw smell of Masala is gone .
  • Add Tomatoes & Salt .
  • Cook until its mashed together .
  • Add some Water ( according to the gravy You need ) .
  • Allow everything to boil together .
  • Carefully transfer the fried Chicken into the gravy .
  • Allow the Chicken to cook inside the gravy for few mins.
  • Garnish with some Coriander Leaves .
  • Serve it hot with Ghee Rice or Pathiri or even with Bread .

Notes

  • After cleaning the Chicken, try to tie the legs together. Otherwise after cooking the Chicken You will get a funny looking Chicken ( I am sure You don’t want that 🙂 ) .
    If there is leftover filling after You fill the cavity, You can always add that to the gravy .
    Instead of frying the Chicken, You can always Bake & in final 10min just broil, so that it has that crispy texture .
