Ingredients

  • 2 Whole Fish, cleaned and scored,  use any kind of Fish

  • Masala needed to grind :
  • 4-5 Green Chillies

  • 5-6 cloves of Garlic

  • 2tbsp grated Ginger

  • 1tbsp Black Pepper

  • 1bunch of Coriander Leaves

  • 1tsp Garam Masala

  • 1/2tsp Turmeric Powder

  • Salt

  • Coconut Oil, for frying

Directions

  • Combine all the ingredients together and using a grinder, grind into fine smooth paste.
  • Carefully pat down all the Masala onto Fish.
  • If there is left over Masala, don’t discard, just pat down on to Fish.
  • Allow Fish to sit inside the fridge for about 30 min.
  • Shallow fry until Fish is cooked through and has a nice golden brown color.
  • Serve Kerala Style Whole Fish Roast hot  or warm with  Rice and Potatoes wedges.

Notes

  • If you want more spiciness or heat to the dish add more Green Chillies or Black pepper powder.
  • While frying Fish You should be very careful, coz  Fish will have a tendency to stick down to  pan coz of Ginger and Garlic in masala.
    So what I did is I put a layer of Banana Leaf on the pan and kept  Fish on top of the Leaf. Banana Leaf will give Fish a nice flavor and aroma. Even some people add Curry Leaves to the Oil to get good flavor.

    Here in Kerala some people put around 4 small pieces of broomsticks ( from the coconut leaves ) crisscross on the pan with the fish iover it..
