Kerala Style Vattum Karallum Fry
Ingredients - Kerala Style Vattum Karallum Fry
- 1-2lbs mix of Chicken Liver, Gizzard, Hearts and Neck
- 1 Onion, finely chopped
- 5-6tbsp Ginger Garlic, finely chopped or paste
- Curry Leaves
- 4tbsp Coriander Powder
- 1tbsp Chilli Powder
- 1tsp Turmeric Powder
- 1tbsp Garam Masala
- Black Pepper Powder
- Salt
- Oil
Directions
- Heat some Oil in a pan and saute Onion and Curry Leaves.
- Saute until Onion turns light golden brown in color.
- Add Ginger and Garlic.
- Saute until raw smell is gone or saute in a medium flame for about 2mins.
- Add Coriander, Chilli and Turmeric Powder.
- Saute until raw smell is gone.
- Carefully add washed Chicken Liver, Gizzard, Heart and Neck peices.
- Add Salt and mix everything together.
- Cover pan with a tight lid and allow Chicken peices to cook.
- Don’t forget to stir ocasionally.
- In few mins you could see Water coming out of Chicken pieces.
- Cover and cook until all Chicken pieces are fully cooked.
- Remove the lid and allow all the liquid to evaporate.
- Add Pepper Powder and Garam Masala.
- Mix everything well.
Serve Kerala Style Vattum Karallum Fry hot with Rice or Roti or Bread.

Note – Make sure to wash Chicken Heart, Gizzard, Liver and Neck pieces well. You can always add Tomato, if you like.
