Kerala Style Onepot Chicken and Rice / Erachi Choru
Ingredients - Kerala Style Onepot Chicken and Rice / Erachi Choru:
- 1 whole Chicken, cut into medium size peices
- 3cup Basmati Rice, washed and soaked in Water for about 30min
- 1 Onion, chopped
- 4-5tbsp Ginger and Garlic, finely chopped/paste
- 3-4 Green Chillies, sliced
- 2-3 Tomato, diced
- 1tsp Chilli Powder
- 1/2tsp Turmeric Powder
- 1tbsp Garam Masala
- Salt
- Ghee/Clarified Butter/Oil
- Whole Spices ( Cinnamon, Cloves, Cardamom and Star Anise )
- Boiling Water
- Coriander Leaves, garnish
Directions
- Heat some Oil in a pan and add Whole Spices ( Cinnamon, Cloves, Cardamom and Star Anise ).
- Allow spices to pop and then add Onion.
- Saute until Onion turns golden brown in color.
- Add finely chopped/paste Ginger, Garlic and Green Chillies.
- Saute for few mins or until raw smell is gone.
- Add Chilli Powder and Turmeric.
- Saute for few mins or until raw smell is gone.
- Add Tomato and saute until Tomatoes are cooked down.
- Carefully add Chicken and mix everything well.
- Cover the pan with a tight lid and allow Chicken to cook.
- Don’t forget to stir occasionally.
- When Chicken is partially/halfway cooked add Basmati Rice.
- Mix everything.
- Carefully add hot/boiling Water.
- Pour until everything is fully covered with Water.
- Add Salt, Garam Masala and Ghee/Clarified Butter.
- Mix everything.

- When Water and Rice boils and comes to same level, cover the pan with a tight lid.
- Turn off the flame and allow everything to get cooked.
- Let it sit there for atleast 20-25mins.
- Inbetween, don’t try to open the lid.
- After 20-25min, open the lid and fluff the Rice using a fork.
Serve Kerala Style Onepot Chicken and Rice / Erachi Choru hot with Raita, Pappadam and Pickle.
