Kerala Style Egg Roast

10 Hard Boiled Eggs
2 Onions, thinly sliced
2-3tbsp Garlic, paste or finely chopped
2-3tbsp Ginger, paste or thinly sliced
3 Green Chillies
2 Tomato, diced
Curry Leaves
2-3tbsp Coriander Powder
1/2tsp Chilli Powder
1/2tsp Turmeric
1tbsp Black Pepper Powder
1tbsp Garam Masala
Salt
Directions
- Heat some Oil in a pan and saute Onion and Curry Leaves.
- Saute until Onions are soft and transparent.
- Add Garlic, Ginger and Green Chillies.
- Stir for few mins or until raw smell of Garlic and Ginger is gone.
- Add all the Dry Spices, ( Coriander, Chilli, Pepper, Turmeric and Garam Masala )
- Mix or stir or saute until raw smell of spices are gone.
- Add Tomato, Salt and Water ( around 1/2cup is good ).
- Allow Tomates to cook through.
- Carefully add hard boiled Eggs.
- Mix everything well.
- Serve Kerala Style Egg Roast hot or warm with Bread or Appam or Roti
