Ingredients

  • 10 Hard Boiled Eggs

  • 2 Onions, thinly sliced

  • 2-3tbsp Garlic, paste or finely chopped

  • 2-3tbsp Ginger, paste or thinly sliced

  • 3 Green Chillies

  • 2 Tomato, diced

  • Curry Leaves

  • 2-3tbsp Coriander Powder

  • 1/2tsp Chilli Powder

  • 1/2tsp Turmeric

  • 1tbsp Black Pepper Powder

  • 1tbsp Garam Masala

  • Salt

Directions

  • Heat some Oil in a pan and saute Onion and Curry Leaves.
  • Saute until Onions are soft and transparent.
  • Add Garlic, Ginger and Green Chillies.
  • Stir for few mins or until raw smell of Garlic and Ginger is gone.
  • Add all the Dry Spices, ( Coriander, Chilli, Pepper, Turmeric and Garam Masala )
  • Mix or stir or saute until raw smell of spices are gone.
  • Add Tomato, Salt and Water ( around 1/2cup is good ).
  • Allow Tomates to cook through.
  • Carefully add hard boiled Eggs.
  • Mix everything well.
  • Serve Kerala Style Egg Roast hot or warm with Bread or Appam or Roti
  • Enjoy!!!!!!!!!!
