Ingredients

  • Chicken, sliced into medium size pieces
     

  • 2 large Onion, thinly sliced

  • 1 bulb of Garlic, refer *notes

  • Curry Leaves

  • 2tbsp Paprika

  • 1tbsp Cayenne Pepper

  • 1tbsp Garlic Powder

  • 1/2tsp Turmeric

  • Salt

  • Oil

Directions

  • Marinate Chicken with Paprika, Cayenne, Garlic Powder, Turmeric and Salt.
  • Mix everything well and allow Chicken to sit aside for atleast 3omins.
  • Heat some oil in a pan and fry Onions.
  • Fry until Onions turns golden brown in color.
  • Remove fried Onion from pan and keep it aside.
  • Into the same pan add marinated Chicken.
  • Carefully spread Chicken around.
  • Cover pan with a tight lid and allow Chicken to cook.
  • Don’t forget to stir occasionally.
  • When Chicken is halfway cooked add thinly sliced Garlic and Curry leaves.
  • Stir everything well and allow Chicken to finish cooking.
  • Cook until  all  liquid is evaporated and Chicken is lightly roasted.
  • Add Garam Masala and fried Onions.
  • Stir everything well.

Notes

  • Its always great to add more Onion and Garlic while making this Chicken Roast, it will enhance the flavor.
    Try to marinate Chicken and keep it aside for at least 6 hrs or overnight in fridge.
