Kerala Style Chicken Roast
Ingredients needed to make Kerala Style Chicken Roast:
Chicken, sliced into medium size pieces
2 large Onion, thinly sliced
1 bulb of Garlic, refer *notes
Curry Leaves
2tbsp Paprika
1tbsp Cayenne Pepper
1tbsp Garlic Powder
1/2tsp Turmeric
Salt
Oil
Method:
Marinate Chicken with Paprika, Cayenne, Garlic Powder, Turmeric and Salt.
Mix everything well and allow Chicken to sit aside for atleast 3omins.
Heat some oil in a pan and fry Onions.
Fry until Onions turns golden brown in color.
Remove fried Onion from pan and keep it aside.
Into the same pan add marinated Chicken.
Carefully spread Chicken around.
Cover pan with a tight lid and allow Chicken to cook.
Don’t forget to stir occasionally.
When Chicken is halfway cooked add thinly sliced Garlic and Curry leaves.
Stir everything well and allow Chicken to finish cooking.
Cook until all liquid is evaporated and Chicken is lightly roasted.
Add Garam Masala and fried Onions.
Stir everything well.
Serve Kerala Style Chicken Roast hot with Rice or Roti or Appam or Bread.

*Notes:
Its always great to add more Onion and Garlic while making this Chicken Roast, it will enhance the flavor.
Try to marinate Chicken and keep it aside for atleast 6hrs or overnight in fridge.
