Ingredients needed to make Chayote Dal Curry:
2 medium size Chayote, diced
1cup Masoor Dal, washed
Fresh or Dried Shrimp, optional
3 Shallots, sliced
3 cloves of Garlic
Curry Leaves
1tbsp Red Chilli Flakes
1/2tsp Turmeric
Salt
2/3cup Water
Coconut Oil
Method:
Into a Pressure Cooker, combine Chayote, Dal, Water, Turmeric, Garlic and Salt.
Cover the cooker with its lid and cook for 2 whistle.
Meanwhile, heat some Oil in a saucepan and saute Shallots and Curry Leaves.
Saute until Shallots turn golden brown in color.
Add Fresh or Dried Shrimp ( this step is optional ).
Cook for few mins or until Shrimp is fully cooked through, it won’t take more than 3mins.
Add Chilli Flakes and saute until raw smell is gone.
Remove from flame and keep it aside.
Carefully open the Pressure cooker and mix evrything well.
If needed add more water.
Bring everything back to boiling and then carefully add fried Shallots and Chilli mixture.
Mix everything well.
Serve Chayote Dal Curry hot or warm with Rice or Roti.

*Notes:
Chayote: While prepping Chayote keep these things in mind, while peeling Chayote you could feel its slippery and slimy. Its good to wash after peeling the skin to get ride of the slimy texture. Also be careful while using knife, coz it could slip and cut your fingers.
Also there is a seed inside the vegetable and its good to remove.
Dal: I used Masoor Dal to make this Curry, coz it has a creamy texture which I love. You can always use any kind of Dal you like.
Shrimp: Its totally optional or personal choice to use Shrimp in this Curry. You can use Fresh or Dried Shrimp.
