2cup Soya Chunks
1 Onion, chopped
3-4tbsp Ginger Garlic, finely chopped or paste
Curry Leaves
2-3tbsp Coriander Powder
1tbsp Chilli Powder
1tsp Turmeric
2tbsp Garam Masala
1-2 Potato, diced
3-4 Tomato, diced
Chicken Stock or Water

Directions
- How to prepare or cook Soya Chunks:
- Boil Water in a pan and add Salt.
- Taste the liquid and makesure there is enough Salt.
- Carefully add dried Soya Chunks and boil for 2-3mins.
- Turn off the flame and allow it to cool down.
- Once it’s fully cooled squeeze out the Water and keep it a side.
- Method
- Heat some Oil in a pan and add Onion, Ginger, Garlic and Curry Leaves.
- Saute until Onion is light golden brown in color.
- Add Coriander Powder, Chilli Powder and Turmeric.
- Saute for few mins or until raw smell of spices are gone.
- Add Tomato and cook until Tomatoes are fully cooked through or mashed.
- Carefully add diced Potato and pour Water or Chicken Stock.
- Cover the pan with a lid and allow Potato to cook through.
- Once Potato is fully cooked add Soya Chunks.
- To have more gravy add Chicken Stock or Water.
- Allow everything to boil.
- Sprinkle Garam Masala.
- Serve Soya Chunks Curry with Rice or Veg Pulao or Roti.
