Chicken, sliced into medium size pieces
2 large Onion, thinly sliced
1 bulb of Garlic, refer *notes
Curry Leaves
2tbsp Paprika
1tbsp Cayenne Pepper
1tbsp Garlic Powder
1/2tsp Turmeric
Salt
Oil
Directions
- Marinate Chicken with Paprika, Cayenne, Garlic Powder, Turmeric and Salt.
- Mix everything well and allow Chicken to sit aside for atleast 3omins.
- Heat some oil in a pan and fry Onions.
- Fry until Onions turns golden brown in color.
- Remove fried Onion from pan and keep it aside.
- Into the same pan add marinated Chicken.
- Carefully spread Chicken around.
- Cover pan with a tight lid and allow Chicken to cook.
- Don’t forget to stir occasionally.
- When Chicken is halfway cooked add thinly sliced Garlic and Curry leaves.
- Stir everything well and allow Chicken to finish cooking.
- Cook until all liquid is evaporated and Chicken is lightly roasted.
- Add Garam Masala and fried Onions.
- Stir everything well.

Notes
- Its always great to add more Onion and Garlic while making this Chicken Roast, it will enhance the flavor.
Try to marinate Chicken and keep it aside for at least 6 hrs or overnight in fridge.
