Kerala Style Onepot Chicken and Rice / Erachi Choru

Directions

• Heat some Oil in a pan and add Whole Spices ( Cinnamon, Cloves, Cardamom and Star Anise ).
• Allow spices to pop and then add Onion.
  
• Saute until Onion turns golden brown in color.
  
• Add finely chopped/paste Ginger, Garlic and Green Chillies.
  
• Saute for few mins or until raw smell is gone.
  
• Add Chilli Powder and Turmeric.
  
• Saute for few mins or until raw smell is gone.
  
• Add Tomato and saute until Tomatoes are cooked down.
  
• Carefully add Chicken and mix everything well.
  
• Cover the pan with a tight lid and allow Chicken to cook.
  
• Don’t forget to stir occasionally.
  
• When Chicken is partially/halfway cooked add Basmati Rice.
  
• Mix everything.
  
• Carefully add hot/boiling Water.
  
• Pour until everything is fully covered with Water.
  
• Add Salt, Garam Masala and Ghee/Clarified Butter.
  
• Mix everything.
• When Water and Rice boils and comes to same level, cover the pan with a tight lid.
  
• Turn off the flame and allow everything to get cooked.
  
• Let it sit there for atleast 20-25mins.
  
• Inbetween, don’t try to open the lid.
  
• After 20-25min, open the lid and fluff the Rice using a fork.
• Serve Kerala Style Onepot Chicken and Rice / Erachi Choru hot with Raita, Pappadam and Pickle.
