1 Whole Chicken with Skin , cut into medium size pieces
- Marination for Chicken
1tbsp Chilli Powder
1/2tsp Turmeric Powder
Salt
- Ingredients to make Roasted Coconut
1/2cup Grated Coconut
5tbsp Coriander Powder
1tbsp Chilli Powder
1/2tsp Turmeric Powder
1-2tbsp Black Pepper Powder
1tbsp Garam Masala
- Ingredients to make Chicken Curry
1 Onion , finely chopped
5tbsp Ginger , Garlic Paste
3 Green Chillies , splited
2 Tomato , diced
Curry Leaves
1tsp Chilli Powder
1tbsp Black Pepper Powder
1tsp Garam Masala
Salt
Coconut Oil
Directions
- Method for marinating chicken:
Marinate the Chicken with Chilli Powder , Turmeric & Salt .
- Keep it a side at least for 30min .
- Method to make Roasted Coconut:
- On a non-stick pan dry roast Coconut until it turns golden brown in colour .
- Turn the heat down & then add rest of the ingredients .
- Mix everything well .
- On a low flame fry the masala until the raw smell is gone .
- Allow the masala to cool down .
- Using a grinder , grind the mixture into a fine paste .
- If needed add Water to make the paste .
- Final step:
- Heat some Oil in a pan & saute Onion , Green Chillies , Ginger , Garlic paste & Curry leaves .
- Saute until Onion turns light brown in colour .
- Add Chilli Powder , Turmeric , Pepper & Garam Masala .
- Saute masala for few min & then add marinated Chicken & Tomato .
- If needed add more Salt .
- Mix everything well .
- Add roasted Coconut paste into the Chicken & mix everything well .
- Cover the pan with a lid & cook until the Chicken is cooked well .
- Sprinkle some fresh Curry Leaves or Coriander Leaves on top .
- Serve it hot with Rice , Roti or Parotta .
