In a bowl beat 1 1/2 cup Butter ( room temperature ) ,1 cup Sugar & 1tsp Vanilla Essence .
Into the butter mixture add 3 1/2 cup Flour . Mix the mixture well until the dough is crumbly but hold together when pinched .
Roll the dough into a walnut sized balls . With the thumb make a well on the dough & fill with 1/2tsp Apricot Jelly .
Pre – heat the oven to 350degree & bake the cookies for about 10 – 15 min .
