Spinach Curry ( Kerala Style )

This is a good recipe . Its a good curry  for Rice & also for Roti . Sometimes I used to make this curry  with Snake Gourd , Methi Leaves & also with Bottle Gourd . In this recipe you can use any kind of Dal .I usally use Moong Dal  or Masoor Dal .

For this recipe you need :
4 cup Spinach
1/2 cup Dal

Cook Dal by adding some water & Salt .
Once Dal is cooked add Spinach & cook .

To Grind :
1/2 cup grated Coconut
3 Green Chilies
2 whole Red Chilies
1/4tsp Cumin Seeds
1tsp Turmeric Powder

Add some water & grind all the ingredients together .
When Spinach & Dal is cooked , add the grind mixture .
Mix everything well & turn off the gas .

For Garnish :
1tsp Mustard Seeds
6-7 Shallots
Curry Leaves
2 whole Red Chilies

In a pan heat some oil & splutter Mustard Seeds .
Add thinly sliced Shallots , Curry Leaves & Red Chilies .
Fry till Shallots turn golden brown .
Pour this over the Spinach & Dal curry .
Mix everything well .
Serve hot with Rice or Roti .
