Special Rice ( Made with Yogurt )

I got this recipe from my Aunty . It taste just like Biriyani . If you are a Vegetarian make this Rice & serve with a spicy Potato Curry ,I am sure everyone will love this .
In this recipe you have to mix spices & garlic in Yogurt , then you will add this into the pan & fry in low flame .
So lets start :
1st you have to mix the Yogurt mixture ,

1/4 cup Yogurt
1tbsp chopped Garlic
1Stick Cinnamon
4 Cloves
4 Cardamom
1tsp Turmeric Powder

Mix everything together & keep it a side for 10min .

For making Rice :

2cups Basmati Rice
4cups Hot Water
1 thinly sliced Onion
Cashew & Raisins
Coriander Leaves

Heat some ghee in a pan & fry the Onions until it turns golden brown in color .
Add some Cashew & Raisins & fry until its puffed up .
Remove the pan from heat & add the Yogurt mixture , mix it well & turn back to the heat .
(Don’t add the Yogurt into a very hot pan , it will curdle the Yogurt & ruin the whole dish .)
Stir the mixture until the mixture is dried & it forms like a thick paste .
Add the washed Rice & fry for few min .
Pour the hot water & Salt .
When the water & Rice come to the same level close the pan with a tight lid & turn off the gas .
Don’t open the pan , leave it for 20min like that & then fluff up the Rice .
Add some finely chopped Coriander Leaves .

Serve it hot with some Chicken Curry .Β
