Ribbon Rice


Rice :


3cup Basmati Rice
1stick Cinnamon
3-4 Cardamom
4-5 Cloves
Water
Salt

Cook the Rice , adding all the whole masala’s .

Carefully divide the Rice into equal 3 portions.
In 1 portion add some Yellow food color & juice of 1-2 Lemon .
In 2nd portion add the Coriander Chutney .
In 3rd portion don’t add anything .

Coriander Chutney : 

1-2 bunch of Coriander Leaves
1cup grated Coconut
1tsp Ginger
3-4 Green Chilies
1 Lemon Juice
Salt

Add all the ingredients into a blender & make a fine paste.
Taste the mixture & adjust the heat & sour flavour .

Shrimp Curry :

2pound Shrimp                            1tbsp Chili Powder
1 Onion                                       1/2tsp Turmeric Powder
4-5 cloves of Garlic                     1/2tsp Garam Masala
3-4 Tomatoes                              Salt
Curry Leaves
Coriander Leaves

In a pan heat some Oil & saute Onion & Garlic .
When onion turns golden brown in color add all the dry ingredients .
In a low flame fry all the masala’s for 5min .
Add chopped Tomatoes & Salt .
Stir until all the Tomatoes are mashed & cooked .
Add the Shrimp & mix everything well .
Cook until Shrimp is cooked & all the water is dried up .
Add finely chopped Coriander Leaves & Curry Leaves .

Minced Meat :


For this layer you can use any kind of meat like Chicken , Beef or Lamb .

1pound minced Beef                 1tsp Chili Powder 
1 Onion                                    1/2tsp Turmeric Powder 
1tbsp Ginger                             1tbsp Pepper Powder 
1tbsp Garlic                              1tbsp Garam Masala 
3-4 Green Chilies                     Salt 
Curry leaves 
Coriander Leaves 
Chop Onion , Ginger , Garlic & Green Chilies  into fine pieces.
In a pan heat some oil & saute all the chopped ingredients .
When Onion turns golden brown in color add all the Powder & Salt .
Stir everything well  for 5min in a low flame .
Add the Meat & mix well .
Cook everything together until the Meat is cooked & all the water is dried up .
Add finely chopped Coriander & Curry Leaves . 
Assembling Ribbon Rice :

Take a Cake pan & spray some Oil .
1st layer the White Rice .
Press down  the layer firmly .
2nd layer is Minced Meat ..
Press down the layer firmly.
3rd layer is Coriander Rice .
Press down the layer firmly .
4th layer is Shrimp Curry .
Press down the layer firmly .
5th layer is Yellow Rice .
Press down the layer firmly .
Cover the pan with a foil paper .
Pre-heat the Oven to 350degree & bake for 30-35min  or until its heated through .
Carefully transfer the Rice into a plate by turning the Cake pan upside down .
Serve it hot with Raita , Pickle & Pappadam .

  2. if ur making this recipe be careful to press each layer down nicely ……..otherwise it will not hold together …………..

     
  3. need to be very careful while layering…be specific with the quantity of spices and the amount of minced chicken or beef to be used…
