Checkerboard Cookies

 

This is a good recipe , but have to use ruler to get even pieces . This cookie have a different procedures to do .

Cream 2 sticks of Unsalted Butter ( room temperature ) & 1/2 cup Sugar . Into that add 1tsp Vanilla essence , 1/4 tsp Lemon essence & 1/4tsp Salt . Later add 2 1/2 cup of all purpose Flour into the butter mixture & mix well .Dough will be loose & crumbly . Using your hand knead the dough & divide the dough into half portions . Sprinkle 3tbsp of Coco Powder into one of the halves . Knead the dough until Cocoa   has been fully incorporated . Wrap this dough into a plastic wrap & keep it a side .

Roll the dough into a rectangle shape with 3/8 inch thick .

Whisk together 1 Egg & 1 tbsp Water , use this as a binding agent for each layer .
Brush the egg wash & place the Chocolate dough over the Vanilla dough .
Using a ruler cut the dough into equal parts .

Brush some egg wash on the 1st dough & keep the 2nd dough on the top .

Using the ruler cut the dough into equal lengthwise pieces .

Take 1 pieces of sliced  dough & brush the  egg wash .
Place the next strip on the top , like that use 3 slices to make one log .
If the 1st layer is Vanilla , Chocolate , Vanilla  then the 2nd layer should be Chocolate , Vanilla , Chocolate .
Like that alternate the layers . Don’t forget to brush egg wash.

Pre -heat the oven to 350 degree .
From each  log slice  1/4 inch  thick cookie  pieces .
Place this into a cooking sheet & bake for about 10 – 12 min  or until its done .
Let it cool down completely &  store it in a container .
Will get around 4 dozens of cookies.
