Chadacha Manga Curry / Crushed Mango Curry
Ingredients needed to make Chadacha Manga Curry / Crushed Mango Curry:
2 Green Mango, sliced
4-5 Shallots, thinly sliced
3-4 Green Chillies, sliced
1/4tsp Mustard Seeds
Pinch of Methi Seeds
2 Whole Red Chillies
2-3 cup Coconut Milk, refer *notes
Using a Food Processer crush mangoes into small pieces.
Keep it a side.
Heat some Coconut Oil in a pan and add Mustard Seeds.
Allow Mustard Seeds to pop and then add Methi Seeds and Dried Chilies.
Add Shallots, Green Chilies and Curry Leaves into the Oil and stir everything well.
Stir until Shallots turns transparent.
Add Crushed Mango / Chadacha Manga into it and stir everything well.
Carefully add Coconut Milk and Salt.
Allow it to boil and adjust the Salt according to your taste.
Serve Chadacha Manga Curry / Crushed Mango Curry with Rice.
Chadacha Manga Curry / Crushed Mango Curry is a very tasty and easy recipe to try. You can always make this curry a day head, it will enhance the flavors. It’s best when you serve it hot with Rice and Fried Fish, a perfect combination.
In this particular curry it’s better to use Shallots instead of Onions. I tried with both, and I felt when Shallots are added the flavor of the curry is more subtle. When I used Onions, color of my curry slightly changed into pink and could taste a sharp oniony flavor. So I would prefer Shallots rather than Onions in this particular curry.
I used tinned Coconut Milk for this curry. I took 3cup of Water and added around 5-6tbsp thick Coconut Milk and diluted. If you like more Coconut Milk flavor, add more thick Coconut paste according to your taste.
After making the Curry if you feel its too thick always add more Coconut Milk to thin according to your taste/consistency.
Always add more Green Chillies according to your taste. Some Green Chillies are more spicy and some are not. So according to the one you use, do adjust the quantity of Green Chilies.
