Beetroot Pachadi

 

For this recipe you need :

1 big Beetroot
2tbsp Water
Salt

Grate the Beetroot & cook with little water & Salt .
Allow all the water to cook down .

For Grinding : 

1cup grated Coconut
3-4 Green Chilies
1tsp Mustard Seeds
Curd or Yogurt

Grind everything into a fine paste .
Instead of water use Yogurt to grind the Coconut .
Add this mixture to the cooked Beetroot .
Turn off the gas .
When the curry is cooled down add 1/2cup of Yogurt .
Mix everything well .

For Garnish :

1tsp Mustard Seeds
2 Whole Red Chilies
Curry Leaves
Coconut Oil

Heat some Oil in a pan & crack all the ingredients .
Pour this on the top of Beetroot Pachadi .
Serve with Rice .
