Arroz Con Pollo ( Chicken & Rice ) Classic Spanish Dish

Ingredients : To make Arroz Con Pollo

1 Whole Chicken , cut into 8 pieces , try to keep the skin on
Pepper Powder
Salt

Marinate the Chicken with Salt & Pepper .
Keep it inside the Fridge for about 1/2hr .

Olive Oil
1 Onion , chopped
4-5 Cloves of Garlic , minced
1 Green Bell Pepper , diced
3 Tomatoes , chopped
1cup Frozen Green Peas
2tbsp Paparika
1tsp Turmeric Powder
2cups Basmati Rice
4cups Hot Water
Salt

Method :

Heat some Oil in a big pan & sear the both sides of Chicken until it turns golden brown in color .
Remove the Chicken from heat & set a side .

In the same pan add all the chopped Vegetables ( Onions , Garlic , Bell Pepper ) .
Saute the vegetables until its soft & transparent .
Add the Rice & stir for 2min & add the Tomatoes .
Stir everything nicely .
Pour the Hot water into the Rice & add Salt & Green Peas .
Carefully keep the Chicken Pieces into the Pan .
Allow the water to reduce down to Chicken & Rice level .
( If needed carefully stir the Chicken & Rice mixture .)
Cover the pan with a tight lid & turn off the Gas .
After 20-25 min open the lid & fluff the Rice using a fork .

Serve it Hot .
