Ari Unda ( Rice Ladoo )



Take 2cups of Kerela Rice ( Matta Rice ) & dry roast it until it all pops ( don’t wash the rice , also try to roast it in a heavy bottom pan , cast iron skillet will be more good ) . Once it all pops out remove from heat & let it cool down a little ( don’t cool it for a long time cos when u grind , it will not grind nicely ) . Using a Mixer grind all the rice . Into the rice powder add 1cup of Grated Coconut ( if u want u can use more coconut ) . Into this Rice & Coconut mixture add melted Jaggery ( just melt the jaggery by adding some water , no need to make any strings , be sure to strain the syrup cos it will contain some dust , if u have left over syrup u can store it in fridge for later use ) . Pour as much syrup into the rice mixture so that u can make balls out of it . You can keep this ladoo for a week .

  2. try adding 1 cup roasted cashew nut powder and 1 teaspoon cardamom powder and a 1/2 teaspoom cummin powder… thanks for the basic recipie….
